- 1/2 cup brussels sprouts
- 1 cup sliced radishes
- 2 tablespoons olive oil (I used avocado oil)
- Salt and pepper to taste
1. Combine olive oil, salt, pepper, and pepper flakes in a large plate or bowl. Add cut-up vegetables and toss slowly to coat in the spices. Set aside for 30 minutes to marinate in the marinade. Preheat oven to 350 °F / 180 °C.
2. Remove vegetables from the bowl and slice them into small chunks. Toss with olive oil again and place on a baking sheet. Bake in the oven for 20 minutes or so, or until increased in size and soft.
3. Place all ingredients into a blender or food processor and pulse until well combined but still chunky. Add salt to taste if desired.
4. Serve immediately, or chill in the fridge for a couple of hours.
