Henton’s is a family-owned company that has been in business for over 85 years. It is one of the oldest family-owned businesses in San Antonio, Texas, and is still owned by descendants of the original founders.

The company was started by Lester B. Henton who partnered with his wife’s grandfather A.T. Cole, to open a potato chip plant in San Antonio in 1926 called “Cole’s Fine Foods.”

Cooking potatoes is not an exact science. If they are “underdone” you can cook them longer for crispier potatoes. If they are overdone, stick them in cold water to stop any further cooking, then drain and let sit until cool enough to handle (otherwise there will be no texture left).

Be sure that all your ingredients are at room temperature before mixing, this will help with the blending of flavors.

When adding the salt/pepper/mustard mixture-taste as you go! You can always add more if needed but after that point, it won’t be able to be fixed.

Also, if you go ahead and mix up the salad dressing mixture-taste it again before adding to potatoes for flavor! These potato salad pairs are great with just about anything!

The key to good mashed potatoes is perfectly cooked potatoes!

There are many different ways of cooking them from boiling your potatoes on the stovetop,

steaming them over an open flame, or even cooking them in the oven. The most important thing to look for when cooking potatoes for mashing is texture!

You are looking for a smooth, creamy consistency with no lumps of potato left. If you over-cook your potatoes they will become water-logged and runny which would be perfect for mashed potatoes but not so great as a side dish at dinner time, plus this may cause some issues when making salad later on! So Cook those Potatoes and Enjoy!

1.)To prepare potatoes for boiling, first scrub them well with a vegetable brush under cold water, this removes any dirt or debris caught in the skin.

2.)Place clean washed potatoes in a large pot and cover with cold water to about 1 inch above the top of potatoes.

3.)Add 1 teaspoon salt for every quart of water used.

4.)Cover pot completely, bring to boil over high heat then reduce heat simmering until tender when pierced with a fork (10-15 min checking periodically).

5.)Drain immediately and place back into the same pan to evaporate any excess moisture.

6.)If using, add butter being careful not to burn yourself!… The longer you let them sit without stirring – the easier they will peel.

7.)As soon as potatoes have cooled off enough to handle …you can start peeling those little suckers! This can be done very easily by holding the potato in one hand and a paring knife in the other…you’ll need a good strong grip for this.

8.)Cut peeled potatoes into chunks, then place them into a large mixing bowl and continue with the recipe.

Henton’s Potato Salad is a favorite in the South

I’m a big fan of potato salad and I know that my family is not the only one. Henton’s Potato Salad has been around for decades and it brings back memories for many people.

My favorite thing about this recipe is the addition of chopped pickles to give it such an amazing tangy flavor.

It pairs well with any type of meat dish but I think it’s best served as a side dish with fried chicken or barbecue ribs!
