1 ½ pounds potatoes (peeled) 1/4 cup celery seed
4 tablespoons sugar
3 tablespoons vinegar
2 teaspoons salt
¼ teaspoon pepper
½ teaspoon mustard
1 cup mayonnaise
½ cup salad dressing or more, if desired
Chop potatoes into small cubes. Place in a saucepan and cover with water. Cook until tender, about 20 minutes.
Drain water and let cool to room temperature (approx. 3 hours). Mix all ingredients together in a large bowl except for the salad dressing and add to potatoes.

There are many different ways of cooking them from boiling your potatoes on the stovetop,
steaming them over an open flame, or even cooking them in the oven. The most important thing to look for when cooking potatoes for mashing is texture!
You are looking for a smooth, creamy consistency with no lumps of potato left. If you over-cook your potatoes they will become water-logged and runny which would be perfect for mashed potatoes but not so great as a side dish at dinner time, plus this may cause some issues when making salad later on! 1.)To prepare potatoes for boiling, first scrub them well with a vegetable brush under cold water, this removes any dirt or debris caught in the skin.

6.)If using, add butter being careful not to burn yourself!… The longer you let them sit without stirring – the easier they will peel.
7.)As soon as potatoes have cooled off enough to handle …you can start peeling those little suckers! This can be done very easily by holding the potato in one hand and a paring knife in the other…you’ll need a good strong grip for this.
8.)Cut peeled potatoes into chunks, then place them into a large mixing bowl and continue with the recipe.
