How To make Ensalada De Pasta Fria Con Jamon
- 4 cups of uncooked fusilli pasta
- 6 to 8 hard-boiled eggs (you can use a hard-boiled egg in each bowl)
- 1 pound of ham, diced into bite-size pieces
- 1 cup of pickled vegetables (we used sweet sauerkraut)
- 1 red onion, minced
- 2 cloves garlic, minced
- ½ cup white vinegar for the dressing and ¼ cup for the cooking process.
1. In a large bowl, toss the cooked pasta in olive oil, garlic, and red onion.
2. In a small saucepan on medium heat, mix the vinegar with 1 tablespoon of olive oil and ¼ teaspoon of salt. Whisk until the mixture is slightly lumpy and almost starts to bubble.
3. Remove from heat, add salt and pepper to taste (optional), add the garlic, red onion, and pickled vegetables and stir to combine. Pour over pasta mixture; toss gently to coat all ingredients.
