- 1/4 teaspoon garlic powder
- pinch salt and pepper
1. To prepare the couscous salad, cook the couscous according to the package instructions. Drain and let cool. In a small mixing bowl, toss the chickpeas with 1 Tbsp. Fresh lemon juice.
2. In a small skillet over medium heat, add 1 Tbsp. Olive oil. Once hot, add the peppers and saute until they brown and blacken on the edges (about 5 minutes).
3. Add the balsamic vinegar to the peppers and saute for 30 seconds. Remove pepper mixture from heat and set aside.
4. In a mixing bowl, combine the couscous, roasted vegetables, and 2 Tbsp. Olive-oil. Pour the balsamic pepper mixture on top and toss to combine.
5. In a small mixing bowl, add the remaining 1 Tbsp. Olive oil, garlic powder, and salt and pepper to taste. Whisk until combined, then drizzle on dressing before serving.
