Ingredients:

  • 2 cups of Panko (Japanese bread crumbs)
  • or 3 cups if making a double batch
  • One cup of all-purpose flour 2 tsp.
  • ground white pepper  1/4 tsp
  • cayenne pepper (optional) 3 large eggs
  • beaten 1 bag of shredded coconut (about 4 cups) 24 – 26 deveined and peeled uncooked shrimp
  • thawed if frozen Oil for frying
  • approximately 1 inch deep in a large wok or pot.

Preparation:

1. In a large bowl, toss the flour and salt together, then set aside.

2. In another large bowl or deep dish that you can throw the shrimp into, later on, beat 1 egg until mixed well.

3. Add the other beaten eggs, Panko crumbs, and white pepper to the flour mixture.  Mix thoroughly until it’s all mixed evenly.

4. Form the shredded coconut into small mounds, about 1″ in diameter, on a plate or platter.

5. Dredge each shrimp in the flour mixture and gently shake off any excess flour, so there are no white bits left on the shrimp

6. Roll each shrimp in the egg mixture, make sure it’s completely covered, and gently roll it around in the Panko crumbs. Make sure that each shrimp is fully coated all over with breadcrumbs, as this will help your batter stay on as you fry them.

7. Using a deep skillet or wok, heat oil to about 350 degrees (F).  Test the Oil by dropping it in a small piece of bread.  If it browns immediately, the Oil is ready.

8. Once your shrimp are coated, carefully transfer them to the hot oil, avoiding any splashing (Oil hitting you is no fun :P).

Cook them until they’re golden brown, then flip and cook on the other side. Once you remove them from the Oil, let them cool for a minute or two, so they don’t fall apart when you pick them up.

9. Serve with your favorite dipping sauce!

We used this recipe, scaled it down to 1/3 the size of the original recipe.  It yielded about 40 pieces of coconut shrimp, which didn’t seem like enough, so we made a double batch and tripled the dipping sauce recipe. 

The original recipes state that it will serve 4 to 6 people, but we feel it would probably be enough for 8 – 10 regular servings or 20 appetizers.

How to make Coconut Shrimp Chinese Food

Step 1: Collect 6 coconuts. Remove husk, chop into 3 pieces each.

Step 2: Heat frying pan to medium heat with 3 tbsp cooking oil or shortening. Saute coconut for 10 min stirring occasionally. If it starts to smoke, turn down the heat slightly. Do not put the heat on high and do not leave unattended

Step 3: Put coconut into a large bowl and fill with water until it is covered. Let stand for 10 minutes. Rinse off the brown husks under running water or rub them off by hand, then rinse again to ensure all the brown husk has been removed.

Step 4: Remove coconuts from water and let them dry for 1 hour. If the pieces look a little shriveled, you may want to trim a bit off to make even shapes

Step 5: Slice each coconut into 8 equal pieces. Take each part and carefully scoop out the meat with a spoon or ice cream scoop. Repeat this process until all meat is removed from the coconuts.
