2. Grate or chop your cucumbers until they are small enough in size so that there is very little juice left after grating them. You don’t want them thinned out so much that it won’t hold up its shape.

3. Mix grated or chopped cucumber and mint with lentils in a large bowl, add olive oil and vinegar together, ¼ dashes of hot pepper sauce for heat.

Set aside for about 30 minutes before serving the salad so the oils can come out better now that it’s out of refrigeration.
