How to make Ruby Tuesday Broccoli Salad

Ingredients:

  • 2 cups broccoli florets
  • 2 1/2 cups sliced cabbage (or shredded)
  • 1/2 cup chopped onion
  • 1/2 cup chopped green peppers
  • 1/8 cup diced red bell pepper (optional)
  • 6 oz. bacon (cubed) 
  • 3 Tbsp mayonnaise
  • 2 tsp. poppy seeds or sesame seeds (optional)  Salt and pepper to taste

Directions:

Step 1. Prepare to bread: salt and pepper the bacon and place in a bowl or on a plate.

Step 2. Bake at 350 degrees for about 45 minutes until crisp like croutons.

 Step 3. While the bacon is baking, you can prepare your salad dressing. Mix mayonnaise and poppy seeds or sesame seeds (if used) in a small bowl.

Step 4. In a large skillet, prepare the veggies (in a separate bowl). Add onion and green peppers to the skillet and cook until tender. Add broccoli and cabbage to your skillet and cook for about 1 minute.

Step 5. Prepare your salad: In a large bowl, combine cooked vegetable mixture with croutons, bacon, and the salad dressing. 

Step 6. Serve over lettuce leaf and enjoy!
